These Keto Blueberry Crumble Bars are easy to make and taste amazing. These are a great way to start your day, or to have for a snack.

There are two parts to this recipe.  Making the crumble crust and making the blueberry filling.

Start off by preheating your oven to 350 degrees F.

Making the Blueberry Filling

To making In a medium saucepan over medium heat and combine the blueberries and water. Bring to a boil and then reduce the heat and simmer 10 minutes, until the berries can be easily mashed.

Making Blueberry Filling for Keto Blueberry Crumble Bars

Mashed them up a bit, then whisk in your confectioners monk fruit. Finally, sprinkle the surface with xanthan gum and whisk vigorously to combine. Set aside to allow to cool.

Making the Crumble Crust

In a large bowl, whisk together the almond flour, coconut, sweetener, coconut flour and salt.

Then stir in the melted butter and the vanilla extract until the dough begins to clump together.

Assembling the Keto Blueberry Crumble Bars

Press half of the mixture firmly into the bottom of an 8×8 pan.

Bake 10 minutes, then remove from the oven and let cool 10 minutes.

Spread the crust with the blueberry filling. Then sprinkle with the remaining crust mixture. Press the top crust into the filling lightly.

Adding Filling to Keto Blueberry Crumble Bars

Bake another 20 to 25 minutes, until golden and bubbly.

Blueberry Filling

  • 2 cups blueberries
  • 4 Tbsp water
  • 1/2 cup confectioners monk fruit
  • 1/2 tsp xanthan gum

Crumble Crust

  • 1 1/2 cups almond flour
  • 3/4 cup shredded coconut
  • 1/2 cup granular monk fruit
  • 2 tbsp coconut flour
  • pinch of sea salt
  • 6 tbsp butter, melted
  • 1 tsp vanilla extract

  6. Stir in the melted butter and the vanilla extract until the dough begins to clump together. Press half of the mixture firmly into the bottom of pan.
  7. Bake 10 minutes, then remove from the oven and let cool 10 minutes.
  8. Spread the crust with the blueberry filling and sprinkle with the remaining crust mixture. Press the top crust into the filling lightly to adhere.
  9. Bake another 20 to 25 minutes, until golden and bubbly.
  10. Let cool completely before cutting and serving. Store in refrigerator
