You will appreciate that this recipe does not require a long list of ingredients. Also it does not contain unusual items you can’t find at a small-town grocer. These waffles taste wonderful and will certainly “hit the spot” to satisfy those waffle cravings.
You can even use your mini waffle maker to make smaller waffles. If you are batch cooking mini waffles, just have your oven on low to keep them warm until you are done and they are ready to serve.
As a result of being so simple to make and being budget friendly I like to include them in my weekly meal plans pretty often.

You can add other things to this recipe such as sugar free chocolate chips or even walnuts. Also if you are looking to add more protein to your waffle you can include one scoop of Plexus Lean Whey Protein to your batter. Just be sure to adjust the nutrition information accordingly when adding anything to the recipe.
One thing to note is this recipe will not come out quite as “crispy” as a non-keto version would. Low-carb waffles have different ingredients than a regular waffle, so it’s hard to replicate them exactly. Normal waffle recipes use flour, cornstarch and buttermilk to make the waffles crispy. However, those ingredients are too high in carbohydrates and are not keto-friendly.
Additionally you can even use this recipe when you travel. I learned to make these in my hotel room when we travel, and we travel a lot. Just pack your mini waffle maker, the ingredients and a blender bottle or a mini blender. However, if you use a blender bottle be patient. Take that $11 hotel breakfast that wouldn’t be keto anyway!
