Tuesdays in our house have always been a night where we enjoy all things Mexican or Tex Mex. This week I decided to try to make a substitute for the taquitos we all love so much. As a result these Cheesy Chicken Taquitos were born!

These keto, gluten-free and low-carb taquitos were a major hit in out house. And at only 226 calories and 2 net carbs each you can really enjoy having these as part of your weekly keto meal plan.  They also make an amazing appetizer for parties too! Just cut them into thirds and add a toothpick for the party guests to easily pick them up.

Making the Chicken

I always start off each week prepping some chicken breasts for use in any recipes that need shredded or pre-cooked chicken. I put my chicken breasts in a pot with water and slow simmer it for a few hours so that I have plenty of tender juicy chicken on hand in my fridge. 

For this recipe I took out 8 ounces of chicken and shredded it with a fork. Then I mince up 1/4 cup of onion. Next, I heat up 1 tbsp of Coconut Oil in the pan. Once hot I add the minced onions and allow them to cook for a few minutes.  Then I add 1 cup of water and my shredded chicken. 

While the chicken is cooking I mix up my spices then sprinkle them across the top of the chicken. After that I mix the seasoning into the chicken and allow to continue simmering until the water boils down and evaporates.

Making the Shells

While the chicken is cooking mix together your cheese in a large mixing bowl. Then, divide the cheese mixture into 6 equal parts and make them into balls. They wont be easy to ball up (I mean it is shredded cheese) and won’t be tight when you get the balls made. But no worries that is how it is supposed to be but no worries.

Place the balls onto a baking sheet lined with parchment paper. Bake at 400 degrees F for 7-8 minutes, until the edges are golden brown.

Putting the Cheese Chicken Taquitos Together

Let the cheese cool for 1- 2 minutes. Then place a few spoonfuls of the chicken mixture on one edge of each shell. Tightly roll each one into a cigar shape. You will want to do this quickly because the cheese will harden enough to make it difficult to roll.

Just like that you have easy Cheesy Chicken Taquitos! They are great when served with a side of sour cream too.

Cheesy Chicken Taquitos

Cheesy Chicken Taquitos (Keto Low-Carb, Gluten-Free)

Ingredients

For the Filling:

  • 1/2 lb chicken breasts, cooked and shredded
  • 1/4 Cup Minced Onion
  • 1 Tbsp Coconut Oil
  • 1 cup water
  • 1/2 Tsp Chili Powder
  • 1/2 Tsp Paprika
  • 1 Tsp Cumin
  • 1/2 Tsp Onion Powder
  • 1/2 Tsp Garlic Power
  • 1/2 Tsp Salt
  • 1/4 Tsp Pepper

For the Shells:

  • 1 Cup Shredded Cheddar Cheese
  • 1 Cup Shredded Mozzarella Cheese
  • 1/2 Cup Grated Parmesan Cheese

Instructions

  1. Preheat oven to 400 degrees F.
  2. Heat 1 tbsp of Coconut Oil in frying pan. Once hot, add the minced onions and allow them to cook for a few minutes.  Then I add 1 cup of water and shredded chicken.

  4. Continue simmering until the water boils down and evaporates.
  5. While the chicken is simmering, begin preparing your shells.
  6. Mix together cheeses in a large mixing bowl.
  7. Then, divide the cheese mixture into 6 equal parts and make them into balls. They wont be easy to ball up (I mean it is shredded cheese) and won’t be tight when you get the balls made. But no worries that is how it is supposed to be.

  9. Bake at 400 degrees F for 7-8 minutes, until the edges are golden brown.
  10. Let the cheese cool for 1- 2 minutes. Then place a few spoonfuls of the chicken mixture on one edge of each shell. Tightly roll each one into a cigar shape. You will want to do this quickly because the cheese will harden enough to make it difficult to roll.
  11. Serve warm (can be served with sour cream or salsa).
